Gastronomic tour





Aflter a period of researching traditional recipes, local ingredients, of tasting and offering my cooking classes in Casa Crespo I decided to organize this Gastronomic Tour to the Abastos market in Oaxaca. This tour offers the participants the opportunity to get to know the flavors and colors of the local cuisine.

Our tour starts any Saturday in Casa Crespo at 10 in the morning with a cup of coffee or tea and we’ll have a talk about traditional Oaxacan cooking. We’ll toast cacao to make Oaxacan style chocolate, which will remind us that, as well as any other local dish, the enjoyment of chocolate starts before tasting it, it starts in the market.

Upon arriving at the Abastos Market we’ll start our exploration of local ingredients at the enormous baskets, of dried chilies. What chilies are used in mole, what green chilies are used in salsas: but not only an explanation of the local ingredients that we see before us in the market, we will also taste the cheeses, and stop and visit Doña Juana to drink a tejate, a beverage that has come to us across three centuries. After a refreshing drink we will go to the bread section to get a taste of pan amarillo (yellow bread) and so on from bite to bite after a good round of the market we’ll go the chocolate mill to watch as they convert our cacao into a chocolate paste, which upon our return to Casa Crespo we'll mold into tablets or balls, to be taken home with us as souvenirs of a wonderful gastronomic experience in the Abastos Market.
